Slow Cooker

Entry 240 for Wednesday December 9, 2020

  1. What did you do today? Walk with Bailey at 7am; #educoffee with Miguel; shopping; cleanup of email inboxes and course maintenance; prepared dinner for the family.
  2. What did you enjoy? Preparing dinner again with the slow cooker. Today was braised pork chops cooked in the slow cooker with mushrooms, onion, garlic and mushroom soup. The side dishes were scalloped potatoes and some frozen mixed vegetables. Next time I will thicken the sauce in the pork chop recipe, too much liquid.
  3. What did you find difficult? Creating a locked-down “phone only” mode for one of our offspring.
  4. What has changed? I’ve been doing a ketogenic diet for the last couple weeks and it is showing some results. I plan to keep this going throughout my vacations.
